Coconut Quinoa Granola

Crunchy, lightly sweetened granola, with nutritious chia seeds, and quinoa.
Ingredients
  • 3½ cups old fashioned rolled oats
  • ½ cup unsweetened shredded coconut
  • ⅓ cup quinoa
  • ¼ cup chia seeds
  • 2 tsp cinnamon
  • ¼ tsp salt
  • ½ cup coconut oil
  • ¼ cup honey
  • ¼ cup packed brown sugar
  • 1 tsp vanilla
Instructions
  1. Preheat oven to 325F.
  2. In a large bowl, combine oats, coconut, quinoa, chia seeds, cinnamon, and salt, mixing until combined.
  3. In a microwaveable bowl, combine coconut oil and honey, microwave on high 30-60 seconds until melted, then stir in brown sugar and vanilla.
  4. Stir coconut oil mixture into dry ingredients until evenly coated.
  5. Spread granola onto a baking sheet lined with parchment paper.
  6. Bake 30-35 minutes.
  7. Let cool on a wire rack, then break apart and store in an airtight container.
