Nutritious breakfast bars, perfect for those on-the-run mornings.
Ingredients
  • BASE
  • 2 cups old fashioned oats
  • 1 cup chopped peanuts
  • 4 tbsp honey
  • 1 tbsp coconut oil
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 bananas
  • 1 scoop vanilla whey protein
  • TOPPING
  • ½ cup old fashioned oats
  • ¼ cup chopped peanuts
  • 2 tbsp flax
  • 2 tbsp chia seeds
  • 2 tbsp shredded coconut
  • 1 cup saskatoon berries (or blueberries)
  • ¼ cup coconut-almond milk
  • ½ tsp cinnamon
  • 1 tbsp honey
Instructions
  1. BASE
  2. Preheat oven to 350F.
  3. Line 9x9 pan with parchment paper, grease with coconut oil.
  4. Combine ingredients in food processor, processing until combined and wet, about 2 minutes.
  5. Pour into pan, spreading evenly across.
  6. Bake 10 minutes.
  7. TOPPING
  8. Combine ingredients in bowl, stirring to combine.
  9. Remove pan from oven, spread topping on base.
  10. Baking an additional 15 minutes.
