Spicy Peanut Dressing
-------------------------------
2 tbsp smooth peanut butter
2 tbsp rice-wine vinegar
1 tsp sesame oil
1 tsp soy sauce
1 tsp honey
½ tsp sriracha
1 clove garlic, finely minced
1 tsp fresh grated ginger
2 tbsp water
Instructions
Remove chicken breast from fridge at least 30 minutes prior to cooking, allowing it to come to room temperature.
In a pan on medium heat, add about a tablespoon of olive oil. Once heated, add chicken breast, seasoning to taste with salt & pepper, cover with a lid, cooking for about 5-7 minutes on each side, until fully cooked.
Let chicken rest 5 minutes, then shred with a fork.
In a large bowl, combine ingredients.
Whisk together dressing with a fork, dressing your salad to taste.
