Cheddar Chive Beer Bread

A dense, hearty loaf of bread, filled with oats and whole wheat flour, flavoured with beer, chives, caraway, and aged cheddar.
Ingredients
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • ½ cup old-fashioned rolled oats
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ cups light or dark beer (but not stout), cold or at room temperature, but not flat.
  • ½ cup grated aged cheddar
  • ¼ cup chives (chopped)
  • ½ shallot (minced)
  • 2 tsp caraway seeds
Instructions
  1. Preheat oven to 400F.
  2. Grease an 8½ x 4½ inch loaf pan.
  3. In a large bowl, whisk flour, oats, baking powder, baking soda, and salt.
  4. Add the beer, cheddar, scallions, shallots and caraway seeds, folding gently until dry ingredients become moist.
  5. Spread the bread evenly into the loaf pan.
  6. Bake about 35-40 minutes, or until a toothpick inserted into the center of the loaf, comes out clean.
  7. Let bread cool on a rack 5-10 minutes before releasing from pan.
