Fig, Prosciutto & Melon Salad

A light salad, pairing bright flavours of apple and melon with salty prosciutto, and fresh figs.
Ingredients
  • 2-3 cups Arugula
  • 3-4 fresh green figs (sliced)
  • ¼ fennel bulb (very thinly sliced)
  • 2-3 pieces prosciutto (shredded)
  • ⅛th wedge of cantaloupe (thinly sliced)
  • Sprinkle of walnuts
  • 1 cooked chicken breast (sliced)
  • ¼ green apple (thinly sliced)
  • 2 tbsp olive oil (plus more for chicken)
  • 1 tbsp lemon juice
  • Honey to taste
  • Salt & pepper
Instructions
  1. In a pan on medium heat, add olive oil.
  2. Once heated, add chicken breast, cooking about 5-7 minutes on each side, until fully cooked through. Season to taste. Allow to cool slightly before serving on salad.
  3. While chicken is cooking, prep the rest of the salad.
  4. Combine olive oil and lemon juice, whisking together. Whisk in honey to your desired sweetness.
  5. Combine salad ingredients and dressing, top with sliced chicken breast.
