Turkey & Wild Rice Soup

Turkey soup filled with fresh vegetables, wild rice, and finished off with a hit of lemon.
Ingredients
  • 2 tbsp olive oil
  • 3 stalks of celery (diced)
  • 2 large carrots (diced)
  • 2 medium white onions
  • 1 cup diced leek
  • 3 cloves garlic (minced)
  • 3 cups cooked turkey
  • 10 cups turkey stock
  • 2 cup cooked wild rice
  • Juice of 1 lemon
  • Salt & pepper
  • Additional herbs like thyme or parsley if desired.
Instructions
  1. In a large stock pot, add olive oil, and bring to medium-high heat.
  2. Once heated, add onions, celery, carrots, and leek.
  3. Saute 5-8 minutes, until onions begin to turn translucent.
  4. Add garlic, cooking for an additional minute.
  5. Add turkey and stock, bring to a boil, then add cooked wild rice.
  6. Let soup simmer for at 10 minutes.
  7. Add lemon juice, and season to taste with salt & pepper.
