Salted Butter Apple Galette

This apple galette is surprisingly easy to make and the perfect way to use up your end of season apples.

  • 1 tbsp sugar
  • ½ tsp kosher slat
  • 1 cup all-purpose flour
  • 6 tbsp chilled unsalted butter, cut into pieces
  • 1 large egg, beaten.

  • ¼ cup (1/2 stick) salted butter
  • ½ vanilla bean, split lengthwise
  • All-purpose flour (for dusting)
  • 1 pound apples (roughly 2 large apples, slice ⅛" thick)
  • 3 tbsp dark brown sugar
  • 1 large egg
  • 1 tbsp granulated sugar

  4. In a medium bowl, whisk sugar, salt, and flour together.
  5. Add butter pieces, rubbing in with your fingers until mixture resembles coarse wet sand, with a few pea-size pieces of butter remaining.
  6. Add egg, mixing with a fork just until dough comes together,
  7. Place dough on a lightly floured surface, kneading until smooth.
  8. Form into a disk, wrap in plastic and chill until firm, about 2 hours.

  12. Preheat oven to 375F.
  13. In a small pan on medium heat, add butter and scrape in vanilla seeds, cooking until butter foams and browns, about 5-8 minutes.
  14. Remove pan from heat, and remove vanilla pod.
  15. Roll out dough on a floured surfaced into a 14x10" rectangle, about ⅛" thick, and transfer to parchment paper.
  16. Arrange apple slices on dough, overlapping, and leaving 1½" border.
  17. Once apples are arranged, brush with brown butter and sprinkle with brown sugar.
  18. Lift edges of dough over the apples, overlapping over the corners.
  19. Once galette is formed, whisk together egg and a teaspoon of water, brushing the dough with egg wash.
  20. Sprinkle with granulated sugar, and bake 40-45 minutes until golden brown,
  21. Let cool, then serve.
