Pickled Onions

Simple and addicting! After making this recipe, you'll want to have a batch in your fridge at all times.
Ingredients
  • ½ cup apple cider vinegar
  • 1 cup boiling water
  • 1 tbsp sugar
  • 11/2 tsp kosher salt
  • 1 red onion (thinly sliced)
  • 1 tbsp mustard seed (optional)
  • 1 tbsp black peppercorn (optional)
Instructions
  1. Boil 1 cup of water (I use an electric kettle).
  2. Place thinly sliced red onion into a mason jar, add the rest of the ingredients, and stir.
  3. Let rest at room temperature for 1 hour, then store in refrigerator.
  4. Can be kept up to 2 weeks.
