Spiced Pumpkin Loaf

Perfectly spiced, slightly sweet, and entirely satisfying, this Spiced Pumpkin Loaf is a fall favourite.
Ingredients
  • 2½ (250grams) cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp fresh ground ginger
  • 1 tsp ground cinnamon
  • ½ ground nutmeg
  • ¼ tsp ground allspice
  • 1 tsp salt
  • ¾ cup melted butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 400 ml pumpkin puree
  • 3 large eggs (room temperature)

  • ⅔ cup ucing (powder) sugar
  • 1 tbsp water or milk
Instructions
  1. Preheat oven to 375F.
  2. Grease & flour two 8.5x4.5 loaf pans.
  3. In a mixing bowl, whisk together brown and granulated sugar, melted butter, pumpkin puree, and eggs.
  4. Once mixed, add flour, baking powder, salt, ginger, cinnamon, nutmeg, allspice, and salt, mixing until combined.
  5. Evenly divide batter among loaf pans.
  6. Bake for about 45 minutes, until a toothpick comes out nearly clean.
  7. Let loaves cool on wire rack 10-15 minutes before glazing.
  8. For the glaze, combine sugar and water, stirring until mixed. If the glaze too runny, add more icing sugar, if too thick, add more water.
  9. Spread glaze on loafs, and allow to set at least 10 minutes.
