Spiced Pumpkin Loaf

Serves: 2 loaves
- 2½ (250grams) cups all-purpose flour
- 2 tsp baking powder
- 2 tsp fresh ground ginger
- 1 tsp ground cinnamon
- ½ ground nutmeg
- ¼ tsp ground allspice
- 1 tsp salt
- ¾ cup melted butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 400 ml pumpkin puree
- 3 large eggs (room temperature)

- ⅔ cup ucing (powder) sugar
- 1 tbsp water or milk
- Preheat oven to 375F.
- Grease & flour two 8.5x4.5 loaf pans.
- In a mixing bowl, whisk together brown and granulated sugar, melted butter, pumpkin puree, and eggs.
- Once mixed, add flour, baking powder, salt, ginger, cinnamon, nutmeg, allspice, and salt, mixing until combined.
- Evenly divide batter among loaf pans.
- Bake for about 45 minutes, until a toothpick comes out nearly clean.
- Let loaves cool on wire rack 10-15 minutes before glazing.
- For the glaze, combine sugar and water, stirring until mixed. If the glaze too runny, add more icing sugar, if too thick, add more water.
- Spread glaze on loafs, and allow to set at least 10 minutes.
