Salted Butter Apple Galette

- 1 tbsp sugar
- ½ tsp kosher slat
- 1 cup all-purpose flour
- 6 tbsp chilled unsalted butter, cut into pieces
- 1 large egg, beaten.

- ¼ cup (1/2 stick) salted butter
- ½ vanilla bean, split lengthwise
- All-purpose flour (for dusting)
- 1 pound apples (roughly 2 large apples, slice ⅛" thick)
- 3 tbsp dark brown sugar
- 1 large egg
- 1 tbsp granulated sugar

- In a medium bowl, whisk sugar, salt, and flour together.
- Add butter pieces, rubbing in with your fingers until mixture resembles coarse wet sand, with a few pea-size pieces of butter remaining.
- Add egg, mixing with a fork just until dough comes together,
- Place dough on a lightly floured surface, kneading until smooth.
- Form into a disk, wrap in plastic and chill until firm, about 2 hours.

- Preheat oven to 375F.
- In a small pan on medium heat, add butter and scrape in vanilla seeds, cooking until butter foams and browns, about 5-8 minutes.
- Remove pan from heat, and remove vanilla pod.
- Roll out dough on a floured surfaced into a 14x10" rectangle, about ⅛" thick, and transfer to parchment paper.
- Arrange apple slices on dough, overlapping, and leaving 1½" border.
- Once apples are arranged, brush with brown butter and sprinkle with brown sugar.
- Lift edges of dough over the apples, overlapping over the corners.
- Once galette is formed, whisk together egg and a teaspoon of water, brushing the dough with egg wash.
- Sprinkle with granulated sugar, and bake 40-45 minutes until golden brown,
- Let cool, then serve.
